Sails on Lavender Bay is one of Sydney's longest running restaurants, in operation continually over the past 40 years.

In 2016 the restaurant had a contemporary make-over with new larger windows to enhance the amazing Sydney Harbour view.
Saro Derderyan has been with the Sails on Lavender Bay team for well over 5 years as a Senior Sous Chef and in 2018 has taken up the Head Chef position. Saro has worked for some of Sydney's great restaurants such as the Boathouse at Blackwattle Bay and the now closed Foveaux in Surry Hills under Darrell Felstead. Saro is dedicated to creating vibrant food using classic French techniques to enhance the best produce he can source. He endeavours to cook food that boasts confident flavour combinations that aren't overworked.
