Pan Divino’s kitchen is led by the renowned Executive Chef, Stefano Mondonico, who boasts over 17 years of culinary experience. His role as Head Chef at Gowings earned the restaurant One Hat in the Sydney Morning Herald Good Food Guide 2023. Joining Mondonico is Head Chef Adam Bryce, formerly of Doyles and North Bondi Fish, alongside Restaurant Manager Gregoire Gamand, known for his work at Paddo Inn and North Bondi Fish.

Pan Divino embraces Chef Mondonico’s ‘less is more’ philosophy, using earthy elements like flame, smoke, and salt to create memorable dishes. With a strong focus on seafood, the seasonal menu features highlights such as the signature salted blue-eye trevalla, cured and dry-aged in-house, drawing inspiration from Mondonico’s Brazilian roots.
Guests can also enjoy our crudo bar, a unique experience in Sydney’s inner-east, offering fresh oysters, yellowfin tuna, snapper, and silver trevally, all prepared to order. For pasta lovers, our daily hand-rolled and shaped creations include spaghetti with prawns and bottarga and gnocchi with short rib ragu.
