Join the Opening Team at Vineria Luisa – Sous Chef Wanted!
Are you passionate about Italian cuisine and culture? Do you live for beautifully executed pasta, hearty classics, and genuine neighbourhood hospitality?
We’re on the hunt for an ambitious Sous Chef to join the opening team of Vineria Luisa, our new two-level vineria and ginoteria in the heart of Enmore. With a 70-seat capacity, Vineria Luisa will be a local favourite – a vibrant wine bar where people drop in for a glass of vino, a pre- or post-theatre bite, or simply to get their Italian comfort food fix.
As Sous Chef, you’ll play a key role in launching the kitchen from the ground up, working alongside industry veterans to build and lead a small but passionate team. From setup and menu execution to daily service and cost control, you’ll be central to bringing our concept to life.
Immediate start preferred, with training and induction provided at one of our operating venues prior to opening.
What We’re Looking For:
Essential Requirements:
• Full Australian working rights
• Minimum 3 years in a kitchen leadership role (Sous or Junior Sous level)
• Strong knowledge of and passion for Italian cuisine
• Formal culinary qualifications
• High standards of presentation and cleanliness
• Strong understanding of kitchen operations and hospitality cost control
• Calm, focused, and reliable under pressure
• Excellent attention to detail
Nice to Have:
• Food Safety Supervisor certification
• Italian language skills – bonus points!
• Previous venue opening experience
Your Key Responsibilities:
• Supporting the Head Chef in leading daily kitchen operations
• Overseeing prep, service, and food quality to ensure consistency and excellence
• Supervising and mentoring kitchen staff, fostering a collaborative and professional environment
• Assisting with stock control, ordering, and supplier communication
• Maintaining a clean, safe, and well-organised kitchen
• Managing labour and food costs in line with budget
• Upholding food safety and hygiene standards
• Helping to build and sustain a positive kitchen culture
