Senior Sous Chef

We are looking for a talented and experienced Senior Sous Chef for the waterfront institution.


We serve modern cuisine with a seafood focus, using only Australia's best fresh ingredients. We are looking for an experienced sous chef to join and manage our talented team of professionals.


THE ROLE

-You will be the right-hand person to the Head chef in the planning and preparation of the kitchen

We encourage a collaborative, creative approach and would love to incorporate your ideas into the menu while you work with the best suppliers and most premium products.

-Manage all aspects of the kitchen, including operational, quality and administrative functions.

-Manage the kitchen brigade effectively to ensure a well-organised, motivated team and train apprentices and other kitchen staff.

-Stock and labour control, cost management, and financial targets.

-Comply with all health and safety and food safety legislation.

-Maintain operations by implementing policies & standard operating procedures, completing daily tasks and checklists.


WHAT YOU BRING

-Relevant qualifications and At least 2 years of previous experience as sous chef

-Excellent planning and organisational skills

-Ability to multi-task and meet deadlines

-Strong supervisory skills

-Fine dining experience preferred

-A creative approach to the production of food

-Positive attitude, Good communication skills and ability to work under pressure

-Reliable, punctual and trustworthy

-High standard of personal presentation, food quality and hygiene

-Passion for producing high-quality food with an Italian influence

-Knowledge of current food trends

-Working knowledge of various computer software programs
