Cibaria Manly is a beachside Italian venue that will offer a diverse selection of ‘rias’ as our menu will explore all of the goodness that Italian food and drinks are well-known for.

With our premium and convenient location, situated opposite Manly Beach coupled with an amazing menu of Italian comfort foods, and top-notch hospitality service, Cibaria will fast become a locals favourite haunt.

Not a small feat for a 350-capacity venue.

We are looking for a Sous Chef to help and work in our different sections of our restaurant; Forneria, Braceria, Spaghetteria and Pasticceria.

Essential Requirements:

  • Full Australian working rights
  • Minimum 3 years in a kitchen management role
  • Prior experience with Italian cuisine a must
  • Prior experience with menu creation
  • Food Handling Certificate
  • Understanding of hospitality cost control measures
  • Ability to keep cool under pressure
  • Excellent attention to detail
  • Excellent grooming standards
  • Formal cooking qualifications


Preferred Requirements:

  • Food Safety Supervisor certificate
  • First Aid Certificate
  • Prior experience making fresh pastas
  • Butchery experience
  • Pastry experience
  • Wood fire experience
  • Prior experience handling fresh seafood
  • Speak Italian? Bonus!
  • Venue opening experience


Responsibilities will include:

  • Managing the kitchen team
  • Supervising the food prep and cooking
  • Maintaining a fully-stocked kitchen inventory
  • Complying with safety and cleanliness standards
  • Rostering & labour management
  • Ensuring consistent delivery and presentation of dishes in line with venue standards
  • Ongoing staff training
  • Managing cost control measures in line with budgetary guidelines
