We are looking for a Sous Chef to help and work in our different sections of our restaurant; Forneria, Braceria, Spaghetteria and Pasticceria.

Essential Requirements:
- Full Australian working rights
- Minimum 3 years in a kitchen management role
- Prior experience with Italian cuisine a must
- Prior experience with menu creation
- Food Handling Certificate
- Understanding of hospitality cost control measures
- Ability to keep cool under pressure
- Excellent attention to detail
- Excellent grooming standards
- Formal cooking qualifications
Preferred Requirements:
- Food Safety Supervisor certificate
- First Aid Certificate
- Prior experience making fresh pastas
- Butchery experience
- Pastry experience
- Wood fire experience
- Prior experience handling fresh seafood
- Speak Italian? Bonus!
- Venue opening experience
Responsibilities will include:
- Managing the kitchen team
- Supervising the food prep and cooking
- Maintaining a fully-stocked kitchen inventory
- Complying with safety and cleanliness standards
- Rostering & labour management
- Ensuring consistent delivery and presentation of dishes in line with venue standards
- Ongoing staff training
- Managing cost control measures in line with budgetary guidelines
