We are seeking a Head Sommelier with premium dining experience to join our world-class team at this high-profile location.
Requirements:
- Valid Australian working rights and current NSW RSA certificate.
- Comprehensive knowledge of wine and food pairing, with a focus on Italian, French, and Australian wines.
- Completed WSET Level 3 certification.
- Two years of experience in a similar role.
- Fluency in spoken English and a positive attitude toward customer service and teamwork.
- Understanding of COGS and negotiating with suppliers.
Responsibilities:
- Curating and updating the wine list in collaboration with chefs and the Beverage Director.
- Overseeing wine service, engaging with winemakers, and hosting training for Sommeliers and Wine Waiters.
- Advising guests on wine pairings tailored to their dishes, occasions, and budgets.
- Ensuring wines are served at the correct temperature and with appropriate glassware.
- Maintaining knowledge of current wine trends and adhering to food and safety hygiene standards.
